SPRING SALAD: TASTY MEAL LOW IN CALORIES FOR SLIM WAISTLINE
Cold salad with amaranth is real refreshment for hot days.
This salad is very healthy because of the abundance of variety of vegetables. It also contains few calories, saturates quickly and is ideal for dinner.

- 1 avocado
- 1 purple onion
- 1 cup of amaranth
- 1 tablespoon of olive oil
- 2,5 cups of water
- 10 tomatoes
- 100 grams of feta cheese
- Sea salt
Method of preparation:
First, put the amaranth in water and place the mixture over low fire and cook it for about 15 minutes. Amaranth will be ready after it soaks all the water. Once you are done cooking it, put the bowl away from the fire and let it cool.
Cut the onion, avocado and tomatoes into cubes or slices, place them in a bowl and add the cooled amaranth, olive oil and feta cheese afterwards.
Stir everything well and add little bit of salt if needed.
